They are meant to be exchanged representing blessings for the new year. We say Da Ji Da Li in mandarin meaning Good Luck and Smooth Success. Mandarin oranges are called Ji Zi and the word Ji means Luck.

Well, you can make orange juice after you receive the oranges (in a pair usually and never in odd numbers). You will consume a lot of luck in the drink - not a bad idea
