There are a few areas where you can get some advice on taking watch photos:

1.  First you can read through some posts on our sister site ThePuristS.com  They have a photography forum.  Search and you can find all types of information stored in the archives.

2. You can PM some members whose work you admire,  I am sure they can give you some hints about their photo setup.

3.  Trust me, it does not take a lot of money or fancy equipment to get good watch photos...just practice and time. 

I am not sure about the info you are seeking in your last question.

It doesnot appear like the case has an adjuster with would move the GMT hand when acitvated with a stylus.  I assume that the GMT functions via the crown.  With some models you pull the crown all the way out to the last position (time setting position) turn the crown backwards to set the GMT hours and minutes hand first, then turn the crown forwards to set the local time.  The date is linked to the local time function.

Otherwise the Toronto is GMT -5.  Currently the GMT display is set at 2 hours in advance or 10 hours behind.  So the cities can be either in GMT -3 or GMT+9 ( if I did my calculations correctly)
